Healthy Sweet Potato and Kale Soup


If you are looking for an easy and super healthy one pot meal this weekend, look no further!  This super delicious soup is ALSO loaded with tons of super powered veggies!  Sweet potato, kale, carrots, garlic and tomatoes...oh my!!!   I don’t know about you but I just love the idea of being able to chop everything up, add it to a pot and let it just do its magic for an hour or 2!  This deliciously healthy soup is SO comforting and has the added bonus of detoxing your body by restoring acid-alkaline and sodium-potassium balance to the body! 

My hubby really liked it but wanted some extra protein so he added his favorite grilled turkey sausage! That’s another cool thing about this recipe, you can keep it vegan or add protein!! Either way is delicious!


Tastes great, easy to make and it’s good for you!  Thats a win-win-win for sure!!  ENJOY!!


1 medium sweet potato, peeled and cut into 1” cubes
3 carrots, peeled and sliced
3 stalks of celery, sliced
1 sweet onion, diced
8 oz portabello mushrooms, sliced
4 cups of organic kale
3 medium tomatoes, cubed
2 cloves of garlic, minced
2 cans of kidney beans, rinsed and drained
5 cups of low sodium vegetable broth
A few pinches of sea salt
1 t blk pepper
1/4 t all spice
1 t paprika
2 bay leaves
1 T EVOO

In large soup pot heat EVOO on low/med heat,  then add all veggies except kale.  Cook until veggies just start getting soft (8-10 min), stirring often. Add broth, tomatoes, beans, kale and spices. If you want to add more liquid you can add a cup of water or so.  Cook until veggies are tender and the flavors have magically blended together!
