Sweet Potato and Turkey Chili



This seriously healthy version of "beanless" chili is a crowd pleaser!  I get asked to make this time and time again when we are invited to get-togethers! Sometimes I wonder...is it my company or my chili they wanted?? :)

I would label this recipe "healthy comfort food" on steroids!!  The cool thing is you don't get that "bean bloat" like you do from eating regular chili!

I have made this for large get-togethers, parties, game nights, weekend nights..you name it.  If you make this, be SURE to bring extra copies of the recipe!  You WILL get asked!



SWEET POTATO and TURKEY CHILI


Ingredients:

20 oz lean ground turkey
1 large sweet onion/ chopped
8 oz organic tomato sauce
2- 14.5 oz cans organic diced tomatoes
2- 8 oz packages sliced portabello mushrooms
4 cloves garlic/ finely chopped
2 medium sweet potatoes/ peeled and diced into 1/2 inch cubes
3/4 cup water 
1/2 t cumin
1 t chili powder
½ t black pepper
2 bay leaves
sea salt to taste


Instructions:

In a large skillet, brown turkey over medium heat, stir to break it up into smaller pieces as it cooks. 

When meat is cooked add the onion and garlic and cook for 5 minutes. Add mushrooms and cook for another 3 minutes.

Add tomato sauce, diced tomatoes, water, sweet potato and all spices.

Cover and simmer over low heat (stirring occasionally) until sweet potatoes are soft and cooked through (about 30 minutes). Add 1/4 cup of water if needed. Remove bay leaves and serve!

Top with a teaspoon of plain Greek yogurt and enjoy!!!
