Fiesta Quinoa
I just LOVE Mexican
food…but unfortunately it doesn’t love me back. So...I am always
trying to come up with healthy recipes to replicate that “Fiesta” taste
explosion without all the extra fat, calories, carbs and sodium!
This tasty quinoa
recipe totally fits the bill!!! Hubby even gave it 2 thumbs up! Feel free to use gluten free chips instead of organic if you
prefer. I also added a few drops of Tabasco for some extra pizzazz!!! Enjoy!!
Ingredients:
1 cup of uncooked
quinoa (I used red quinoa)
1 can black
beans/drained
1 cup of your favorite
salsa (I like Green Mountain organic)
1 cup cherry tomatoes
cut in half
1/2 cup organic
edamame
1 red pepper/chopped
8-10 organic tortilla
chips (crumbled into small pieces)
1 avocado (cut 3/4 in
small chunks and add quinoa) Save 1/4 for garnish
3 T fresh cilantro
Directions:
Cook Quinoa per
directions on package (usually takes about 15 minutes)
Place cooked quinoa in
a large mixing bowl. Let cool for a few minutes. Add beans, salsa, tomatoes,
edamame, avocado, crushed tortilla chips and cilantro.
Stir gently until
blended. You can taste test to see if you need to add any additional
seasonings. I added some black pepper and a just few shakes of sea salt. You
can even squeeze in some lime juice for extra pizzazz!!!
Serve chilled, at room
temperature or heat in microwave!! Serves 6-8 as a side dish. Will keep
in fridge for 2 days.
