It's always seems to be a challenge trying to find healthy yet "tasty" side dishes and dips. This one however is always a hit! Every time I make it and bring it to a get-together I get asked to share the recipe! Healthy eating doesn't have to be bland and boring!
Clean Eating Southwest Salad
Ingredients:
2-3 tomatoes, diced
2 avocados, diced
1 red bell pepper, diced
1 orange bell pepper, diced
2 cans black beans, rinsed & drained
1 c. organic frozen corn
1-1/2 c. shelled edamame
1/3 c. fresh cilantro, chopped

¼ c. fresh lime juice
1 clove finely diced garlic
A few shakes of cayenne pepper
