Lean and Clean Turkey Muffins
- 1 pkg. Jenny O Extra Lean ground turkey (20 oz)
- 1/2 C Steel Cut Oats, Dry
- 3 large organic egg whites
- 1 1/2 C of finely chopped veggies (carrots, celery, zucchini, mushrooms, red bell pepper and onion) *Experiment with different veggie combos...use at least 3 of the above.
- 1/2 t ground cumin
- 1 t dried Thyme (or dried Italian herb mix)
- 1 t dried yellow mustard
- 1 t black pepper (I used a little more)
- 1 t garlic powder
- 1 t salt
- 1 t Mrs. Dash chipotle seasoning (I use 2 t)
Combine all dry ingredients and oatmeal well
Add chopped veggies, ground turkey and egg whites
Mix well

Spray mini muffin pan (12) with Pam or similar spray
Fill each muffin spot with mixture (ball approx. 2" diameter)
Bake at 350 for 30 min.
12 servings @ 75 calories each/ 1 gram fat/ 4 carb/ 12 g protein.
